Arugula, 1 cup(s) (0.7oz)
Beets, cooked, 2 small beet(s), sliced (3½oz)
Fresh mint, 2 tbsp(s) (0.4oz)

Preparation
Step 1
Prepare rice according to instructions.
Step 2
Once rice is cooked, pour into serving bowl. Add arugula, beet, mint, feta and parsley. Drizzle with vinegar and season to taste. Gently mix.
Step 3
Sprinkle with seeds to serve.
